INJERA

 


Injera is a famous traditional Ethiopian dish  it is a sour fermented flat bread with a slightly spongy texture made of teff flour can also be found in Eritrea and Sudan. Teff is an ancient crop found in Ethiopia and Eritrea it's production is limited to adequate rainfall so it is a bit expensive for a normal household farmer. Teff crops are graded by colour which helps in making different types of injera e.g nech(white), key(red). The making of injera also involves fermentation triggered by adding ersho a clear yellow that accumulates on surface of fermenting teff flour butter and it is collected from previous fermentation. 

REQUIREMENTS.

  • Teff flour
  • Water
INSTRUCTIONS.
  • Add water and teff flour in a bowl and mix them
  • Add 1/2 of wheat flour and mix really well.
  • Fermentation process of the mixture it takes 2 days.
  • Add the fermented solution in a blender .
  • Fry the solution in a frying pan.
  • A pancake like bread will be made known as injera.
  • You are good to eat.
Injera is a really special food in Ethiopia eaten every where it is loved by everyone for a reason .
