UGALI SUKUMA

 


Ugali sukuma is a very famous local dish in East Africa(Kenya,Tanzania,Uganda), you will find this dish in a lot of house holds in those countries also in both small and big restaurants. It is a mix of Ugali with collard greens known as sukuma wiki. Ugali is stiff porridge can be with maize or cassava flour found all over Africa just different names e.g in West Africa they call it fufu and Sukuma wiki is a swahili word shortened sukuma by a lot of people is a collard green vegetable which can be eaten with a lot of dishes when well prepared. I personally have eaten this dish my whole life as I am from Tanzania and I can say it is worth a try. The dish is best eaten bare hands as Ugali is a stiff porridge which makes the food more delicious with bare hands and licking the sukuma with your fingers.

REQUIREMENTS.

  • Maize flour
  • Water
  • Sukuma wiki
  • Onions
  • Tomatoes
  • Pepper
INSTRUCTIONS.
  • Boil hot water in pan.
  • Slowly add maize flour in the boiled water and mix it till it is stiff.
  • Cut onions and tomatoes and put them in another  oiled pan and heat the mix.
  • Wait for 2 minutes and add sukuma in the onion mix and add some pepper.
  • And that is it you have your East African dish.

Ugali sukuma worth a try for a real household African food liked by nearly all moms and grannies and you know when it comes to food mama knows best.
